A presentation titled "Maintaining the Value of Scottish Aquaculture By-products" was given today by Julien Stevens to representatives of the managerial team of Dawnfresh Seafoods Ltd, UK's largest rainbow trout producer and processor. The talk explored possibilities for increasing the value retained by firms through exploiting underutilised processing wastes and was followed by a discussion on potential strategies for Dawnfresh and the wider salmon and trout processing industry for tapping into this valuable resource. The research underpinning this presentation was conducted by Julien Stevens, Dr Richard Newton and Prof Dave Little from the Institute of Aquaculture and funded by IFFO.
